Tabooley(Arabic Salad)

A fresh, vibrant Arabic salad combining parsley, mint, tomatoes, and soaked cracked wheat, perfect for light meals or as a side dish with pita bread.

Ingredients

  • 2 to 3 bunches green onions
  • 3 bunches parsley leaves
  • 1 bunch fresh mint or 3 tsp dried mint
  • 3 to 4 large tomatoes
  • 1/2 cup cracked wheat
  • 1/2 cup salad oil
  • salt and pepper to taste
  • lemon juice to taste

Instructions

  1. Cover cracked wheat with water and let soak while preparing vegetables.
  2. Chop all vegetables finely.
  3. Use only the leaves of the parsley and fresh mint.
  4. Drain and squeeze the water out of the soaked cracked wheat and add it to the vegetables.
  5. Add salad oil, lemon juice, salt, and pepper to taste, and mix well.
  6. Serve with fresh pita bread.
