Colorful vegetable kebabs bursting with fresh flavors, perfect for grilling or chilling. An easy, healthy dish that suits summer barbecues, family dinners, or entertaining guests.

Ingredients

  • 8 small cherry tomatoes
  • 1 medium zucchini, sliced diagonally into 1-inch pieces
  • 2 mushrooms, halved
  • 1 medium yellow squash, sliced diagonally into 1-inch pieces
  • 1 rib celery, sliced diagonally into 1-inch pieces
  • 1/4 cup prepared Italian or salad dressing

Instructions

  1. On 4 skewers, alternately thread vegetables, beginning and ending with cherry tomatoes.
  2. Place the skewers in a shallow baking dish.
  3. Pour the prepared Italian salad dressing over the vegetables.
  4. Chill until ready to serve, turning occasionally to evenly flavor the vegetables.
