Ingredients

  • 1/2 lb. onion, finely diced
  • 1/2 oz. fresh chopped garlic
  • 3/4 lb. mushrooms, chopped
  • 1/2 tsp. dried thyme
  • 1 c. sliced almonds
  • 2 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • touch of almond extract
  • vegetable oil spray

Instructions

  1. Saute onion, garlic, mushrooms, and thyme in a saucepan sprayed with vegetable oil over medium heat until all liquid is gone.
  2. While cooking, combine sliced almonds, olive oil, and almond extract in a food processor.
  3. Add the cooked mushroom mixture to the food processor and process until smooth.
  4. Slowly add balsamic vinegar while processing until well incorporated.
  5. Chill the mixture in the refrigerator before serving.
  6. Use as a traditional pate, stuff mushrooms, or serve with crusty bread or crackers.
