Taboula (Libyan Version)
Ingredients
- 1 cup of cucumber cubed
- 1 cup of tomato cubed
- 1/2 head of lettuce finely chopped ⓘ
- cup of green olives ⓘ
- cup of black olives ⓘ
- 1/2 cup of chopped fresh coriander ⓘ
- 1/2 cup of chopped fresh mint ⓘ
- 1/2 cup of chopped fresh parsley ⓘ
- a juice of a halve lemon ⓘ
- 2 tbsp of olive oil ⓘ
- 1 tsp of salt ⓘ
- 1 tsp of dried mint
- 1/2 tsp of cumen ⓘ
- 1/4 tsp of black pepper ⓘ
- 1/2 cup of chopped bell pepper ⓘ
- 1/2 cup of chopped green onion ⓘ
Instructions
- mix the chopped veggies in a big bowel
- soak the borgol in lemon juice add the olive oil and the seasoning and let it set
- when it sets add the borgol to the chopped veggies and add the olives and mix well
- serve with grilled meat or chicken.
