A fresh and vibrant Middle Eastern salad featuring parsley, tomatoes, cucumber, and bulgur, dressed with lemon and olive oil. Perfect for light, healthy meals or sides.

Ingredients

  • 3 parsley
  • 2 tomatoes
  • 1 cucumber
  • 3 green scallions
  • 1/3 cup wheat or white bulgur
  • 1/2 cup olive oil
  • juice of 2 lemons
  • salt and pepper

Instructions

  1. Soak the bulgur in lemon juice for 1/2 an hour.
  2. Chop all the first four ingredients very fine.
  3. Mix all the chopped ingredients together in a bowl.
  4. Add olive oil, salt, and pepper to taste.
  5. Serve with romaine lettuce.
