  • 1 c. dark bulgar wheat
  • 1 c. boiling water
  • 2 tsp. salt
  • 1/4 c. lemon or lime juice

  • 8 oz. feta cheese, crumbled and drained
  • 1/2 c. chopped green onions
  • 1/2 tsp. dried mint
  • 1/4 c. olive oil
  • fresh black pepper
  • 2 medium diced tomatoes
  • 1 c. chopped parsley

Instructions

  1. Mix bulgur, boiling water, and salt in a pan. Cover and let stand for 20 to 30 minutes or until the bulgur is chewable and the water is absorbed.
  2. Add lemon juice, crushed garlic, olive oil, dried mint, and black pepper to the bulgur mixture. Mix well.
  3. Refrigerate the mixture for 2 to 3 hours.
  4. Add chopped tomatoes, green onions, and parsley before serving.
  5. Crumble and drain feta cheese, then add to the salad and mix thoroughly.
