Ingredients

  • 4 medium baking potatoes
  • 1 lb ground beef
  • 1 pkg taco seasoning
  • 1 cup water
  • 1/4 cup sour cream
  • 1/2 cup chopped onion

Instructions

  1. Wash the potatoes and rub them with vegetable oil.
  2. Bake at 400°F for 1 hour or until soft when pierced with a fork.
  3. Cook ground beef and chopped onion in a large skillet until the beef is browned; drain well.
  4. Add taco seasoning mix and water; reduce heat and simmer for 15 to 20 minutes, stirring occasionally.
  5. Split the tops of the baked potatoes lengthwise and fluff the pulp with a fork.
  6. Spoon the cooked beef mixture over the potatoes.
  7. Top each potato with 1 tablespoon of sour cream.
