Taco Casserole I

A hearty and cheesy taco casserole layered with seasoned beef, creamy cottage cheese, sour cream, and crunchy tortilla chips, perfect for a flavorful family dinner.

Ingredients

  • 1 lb. lean ground beef
  • 1/2 tsp. garlic powder
  • 1 envelope taco seasoning
  • 1 can (8 oz.) tomato sauce
  • 1 c. sour cream
  • 1 c. cottage cheese
  • 2 c. crushed tortilla chips
  • 2 c. (8 oz.) grated Monterey Jack cheese

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet, brown the ground beef, then drain off excess fat.
  3. Remove from heat; add garlic powder, taco seasoning, and tomato sauce to the beef.
  4. Mix well and set aside.
  5. In a medium bowl, combine sour cream and cottage cheese; set aside.
  6. Place half the crushed tortilla chips in the bottom of a 2 1/2-quart casserole dish coated with nonstick spray.
  7. Add enough meat mixture to cover the chips, then cover the meat with half the sour cream mixture.
  8. Sprinkle with half the grated Monterey Jack cheese.
  9. Repeat layers with remaining chips, meat mixture, sour cream mixture, and cheese.
  10. Bake uncovered for 30 to 35 minutes, until cheese melts and casserole is heated through.
