Taco Cornbread

Ingredients

  • prepared cornbread mixture (cornmeal, eggs, milk)
  • 1 lb ground chuck
  • 1 large onion
  • 1 large bell pepper
  • 1 package prepared taco seasoning
  • 1 cup grated cheese (Cheddar or preferred type)

Instructions

  1. Brown the ground chuck, chopped onion, and chopped bell pepper in a skillet.
  2. Add the prepared taco seasoning to the cooked meat mixture and stir well.
  3. Pour half of the cornbread batter into a prepared skillet and spread evenly.
  4. Pour the ground beef mixture in the center of the batter and spread to the edges.
  5. Sprinkle grated cheese over the beef mixture.
  6. Cover completely with the remaining cornbread batter.
  7. Bake until the cornbread is set and golden brown.
  8. Serve hot, optionally with a dollop of sour cream.
