Ingredients

  • 1/4 cup chopped onions
  • 1/4 cup chopped green pepper
  • 1 tablespoon butter
  • 2 (15 oz.) cans chili with beans
  • 1 (12 oz.) can whole kernel corn, drained
  • 1 (4 1/2 oz.) can chopped ripe olives
  • 1 (4 oz.) package shredded sharp Cheddar cheese
  • 1 package corn muffin mix

Instructions

  1. In a large skillet, cook chopped onions and green peppers in butter until tender.
  2. Stir in chili with beans, drained corn, and chopped olives; bring to a boil.
  3. Add shredded Cheddar cheese and stir until melted.
  4. Pour the mixture into an 11 x 7 x 1/2-inch baking pan.
  5. Prepare the corn muffin mix according to package instructions.
  6. Spoon the muffin batter in diagonal bands across the top of the casserole.
  7. Bake at 400°F (200°C) for 15 to 20 minutes until golden.
