Ingredients

  • 2 (9-inch) frozen deep-dish pie crusts, thawed
  • 1 lb ground beef
  • 1 (16 oz) can refried beans
  • 1 onion, chopped
  • 1 cup crushed tortilla chips
  • 1 cup shredded Cheddar cheese
  • 2 cups shredded lettuce
  • 1 large tomato, diced

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Bake the thawed pie crust according to package directions, but cut the baking time in half.
  3. In a large heavy skillet, over medium-high heat, cook ground beef until evenly brown; drain excess fat.
  4. Spread refried beans evenly into each partially baked pie shell, smearing over the bottoms and sides.
  5. Layer cooked ground beef over the beans, then top with chopped onion, crushed tortilla chips, and shredded Cheddar cheese.
  6. Bake for 15 to 20 minutes, or until the crust is golden brown and the cheese is bubbly.
  7. Top with shredded lettuce, diced tomato, sour cream, and black olives before serving.
