Taco Tater Skins are crispy potato shells filled with flavorful cheese, bacon, and green onions, perfect for snack time or sharing at casual gatherings with a spicy, cheesy kick.

Ingredients

  • 6 large russet potatoes
  • 1/2 cup butter or margarine, melted
  • 2 tablespoons taco seasoning
  • 1 cup shredded cheddar cheese
  • 15 bacon strips, cooked and crumbled
  • 3 green onions, chopped
  • salsa (optional)

Instructions

  1. Bake potatoes at 375°F for 1 hour or until tender.
  2. Reduce oven temperature to 350°F.
  3. Allow potatoes to cool enough to handle, then cut each into quarters lengthwise.
  4. Scoop out the pulp, leaving a 1/4 inch shell.
  5. Combine melted butter and taco seasoning; brush over both sides of potato skins.
  6. Place potato skins, skin side down, on a greased baking sheet.
  7. Sprinkle with shredded cheddar cheese, crumbled bacon, and chopped green onions.
  8. Return to oven and bake until cheese is melted and lightly browned.
  9. Serve with salsa and/or sour cream, if desired.
