Taco Tater Skins are crispy potato shells filled with flavorful cheese, bacon, and green onions, perfect for snack time or sharing at casual gatherings with a spicy, cheesy kick.

Instructions
- Bake potatoes at 375°F for 1 hour or until tender.
- Reduce oven temperature to 350°F.
- Allow potatoes to cool enough to handle, then cut each into quarters lengthwise.
- Scoop out the pulp, leaving a 1/4 inch shell.
- Combine melted butter and taco seasoning; brush over both sides of potato skins.
- Place potato skins, skin side down, on a greased baking sheet.
- Sprinkle with shredded cheddar cheese, crumbled bacon, and chopped green onions.
- Return to oven and bake until cheese is melted and lightly browned.
- Serve with salsa and/or sour cream, if desired.
