Ingredients

  • 1 lb ground beef
  • taco salsa
  • Cheddar cheese
  • 4 medium potatoes
  • butter or margarine
  • salt and pepper

Instructions

  1. Bake potatoes until done, about 1 hour at 400°F, or microwave for 4 to 5 minutes.
  2. Split the potatoes open and ruffle the flesh with a fork.
  3. Add butter, salt, and pepper to taste.
  4. Top with browned ground beef, salsa, and cheddar cheese.
  5. Melt the cheese in the oven or microwave.
  6. Serve with corn chips. Optional: use variations with Manwich or jalapeno Cheddar dip.
