Ingredients

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1 tablespoon sugar substitute
  • 1/2 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup canned pumpkin or 2 ripe, mashed bananas or 1 cup cooked, mashed zucchini

Instructions

  1. Mix dry ingredients including flour, sugar, sugar substitute, spices, salt, and baking soda.
  2. Add canned pumpkin, mashed bananas or zucchini, applesauce, egg substitute, and water; mix until well combined.
  3. Spray an 8 x 8-inch pan with nonstick spray or line with muffin cups.
  4. Pour batter into prepared pan or muffin cups.
  5. Bake at 350°F for about 30 minutes or until a toothpick inserted in the center comes out clean.
