Ingredients

  • 1 cup raisins
  • 1/2 cup snipped dates
  • 1 cup water
  • 2 eggs or 1/2 cup egg substitute
  • 1/2 cup margarine or vegetable oil
  • 3 teaspoons liquid sweetener
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1 1/4 cups flour

Instructions

  1. Combine raisins, snipped dates, and water in a saucepan.
  2. Bring to a boil and cook for 3 minutes, stirring constantly, then allow to cool.
  3. Cream together eggs or egg substitute, margarine or vegetable oil, liquid sweetener, and vanilla.
  4. Sift together cinnamon, flour, and baking soda.
  5. Add dry ingredients to the creamed mixture alternately with the cooled date mixture.
  6. Beat well until smooth.
  7. Chill the dough for several hours.
  8. Drop teaspoon-sized portions onto a greased baking sheet.
  9. Bake at 350°F (175°C) for 10 to 12 minutes until golden.
