Ingredients

  • 2 eggs
  • 3/4 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1 or 2 cans chopped green chilies
  • 2 cans creamed-style corn
  • 1/4 teaspoon garlic salt
  • 6 tablespoons Wesson Oil
  • 2 cups grated cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, beat the eggs.
  3. Add cornmeal, baking powder, garlic salt, and chopped green chilies; mix well.
  4. Stir in creamed corn, Wesson Oil, and grated cheddar cheese until combined.
  5. Pour the mixture into a greased casserole dish.
  6. Bake for about one hour, or until a knife inserted into the center comes out clean.
