Ingredients

  • 4 cups zucchini
  • 1 cup onion
  • 1/4 cup margarine
  • 2 eggs
  • 2 cups mozzarella cheese
  • 1 tube crescent roll dough
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon basil
  • 1/4 teaspoon oregano

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel and thinly slice the zucchini; chop the onion.
  3. Saute zucchini and onion in margarine for about 10 minutes, or until tender; remove from heat.
  4. Separate crescent roll dough and press into a pie plate to form the crust.
  5. In a large bowl, beat the eggs and mix in the mozzarella cheese.
  6. Stir the cooked zucchini and onion mixture into the egg and cheese mixture.
  7. Pour the filling into the prepared crust and bake for 30 to 40 minutes, or until lightly browned and set.
  8. Let sit for 5 to 10 minutes before slicing.
  9. Slice into wedges and serve.
