Ingredients

  • 2 boxes tapioca pudding
  • 1 can pineapple tidbits
  • 1 box peach or apricot jello
  • 2 cans mandarin oranges
  • 1 large banana (optional)

Instructions

  1. Cook tapioca pudding according to the directions on the box, using orange and pineapple juice plus enough water to make 3 cups in total.
  2. Allow the cooked tapioca to cool completely.
  3. Mix the cooled tapioca with the pineapple tidbits, mandarin oranges, and sliced banana if using.
  4. Dissolve the peach or apricot jello in a small amount of hot water, then add to the mixture.
  5. Pour into a mold or serving dish and refrigerate until set, about 2-4 hours.
