Tara'S Dahl
Ingredients
- 2 cups red Lentils, rinsed ⓘ
- 8 cups water ⓘ
- 1 tomato chopped
- 1 onion chopped, divided ⓘ
- 8 cloves garlic divided ⓘ
- 2" fresh ginger chopped ⓘ
- 1 tsp cumin ⓘ
- 1 tsp tumeric
- 3/4 tsp salt ⓘ
- 2 cups green beans ⓘ
- 2 carrots diced ⓘ
- 1/4 cup butter ⓘ
- 1 tsp cumin seeds ⓘ
- 1 tsp mustard seeds ⓘ
- Juice of 2 lemons ⓘ
Instructions
- In a large pot add lentils, rinsed and drain. Add water and bring to boil...spooning off foam as lentils start to cook. Add onion, garlic, ginger, tomato and simmer 5 minutes. Add the tumeric, cumin and salt and continue to simmer 5 mins. Add carrots and let simmer 15 mins.
- Meanwhile, heat 1/4 cup butter in skillet, add onion, garlic, mustard and cumin seeds and cook at med/high heat until browned.
- Add frozen green beans and let simmer another 5 mins.
- Add butter mixture from skillet. Add lemon juice.
- Adjust salt to taste. Serve with brown rice.
