Ingredients

  • 1 can shoestring beets
  • 1 cup chopped celery
  • 1 green onion, chopped (tops and bottoms)
  • 1 (3 oz.) package lemon jello
  • 1 teaspoon mustard
  • 1 teaspoon horseradish
  • 1/2 teaspoon salt

Instructions

  1. Dissolve lemon jello in 1 cup boiling water, then add 1 cup beet juice or cold water.
  2. Add beets, celery, onion, horseradish and mustard; stir.
  3. Pour into individual molds or an 8 x 8-inch dish.
  4. Chill until set and serve.
