Ingredients

  • 4 large lamb chops
  • 1 cup raw rice
  • 1 can mandarin oranges, drained
  • 3 cups bouillon
  • 1/2 teaspoon mint leaves
  • salt to taste

Instructions

  1. Sear the lamb chops until browned on both sides.
  2. Place raw rice in the bottom of a buttered casserole dish.
  3. Put the seared lamb chops on top of the rice layer.
  4. Arrange drained mandarin orange segments over the chops.
  5. Add bouillon and season with mint, salt, and pepper.
  6. Bake in a preheated oven at 350°F for 1 hour and 15 minutes.
