Tender lamb shanks slow-cooked with aromatic herbs, garlic, and vegetables, resulting in a rich, flavorful dish perfect for hearty family dinners or special occasions.

Ingredients

  • 3 lamb shanks
  • 1/3 cup oil
  • 3 cloves garlic, finely chopped
  • 1 large onion, sliced
  • 2 carrots, cut into 2 x 1/2-inch strips
  • 2 bay leaves
  • 1/2 teaspoon crumbled oregano
  • 1/2 teaspoon crumbled thyme
  • 16 oz can stewed tomatoes

Instructions

  1. Brown the lamb shanks in oil in a heavy skillet.
  2. While the shanks are browning, lightly oil a large casserole.
  3. Place garlic, onions, and carrots in the bottom of the casserole.
  4. Transfer the browned shanks to the casserole in a single layer.
  5. Add bay leaves, oregano, and thyme. Pour stewed tomatoes over the shanks.
  6. Cover the casserole.
  7. Place in a 350°F oven and cook for 2 1/2 to 3 hours.
  8. Add water if necessary during cooking.
