Special Lamb Shanks

- Brown the lamb shanks in oil in a heavy skillet.
- While the shanks are browning, lightly oil a large casserole.
- Place garlic, onions, and carrots in the bottom of the casserole.
- Transfer the browned shanks to the casserole in a single layer.
- Add bay leaves, oregano, and thyme. Pour stewed tomatoes over the shanks.
- Cover the casserole.
- Place in a 350°F oven and cook for 2 1/2 to 3 hours.
- Add water if necessary during cooking.
