Ingredients

  • 1 1/2 c. water
  • 2 cans milk
  • 1 1/2 c. cornmeal
  • 1 1/4 tsp. salt
  • 1 1/2 tsp. sugar
  • 2 Tbsp. butter
  • 5 eggs
  • 1 Tbsp. baking powder

Instructions

  1. Combine water and milk; heat to simmer.
  2. Add the cornmeal, salt, sugar, and butter; stir over medium heat until mixture is thickened, about 5 minutes.
  3. Remove from the heat.
  4. Beat the eggs with baking powder until they are very light and fluffy.
  5. Add the beaten eggs to the cornmeal mixture, mixing well.
  6. Pour the mixture into a greased shallow baking dish.
  7. Bake at 350°F (175°C) for 45 to 50 minutes.
  8. Serve hot.
