Ingredients

  • 3/4 cup sifted all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup bran flakes
  • 10 raisins finely chopped
  • 1 egg
  • 1/2 cup water
  • 4 1/2 packets Sweet & Low
  • 1 tablespoon salad oil
  • 1 teaspoon cinnamon

Instructions

  1. Sift flour, salt, baking powder, and cinnamon together.
  2. Add bran flakes to the dry mixture.
  3. Beat the egg and add water, Sweet & Low, and salad oil; stir well.
  4. Combine wet ingredients with dry ingredients and mix as well as possible.
  5. Fold in the chopped raisins.
  6. Line muffin pans with paper liners.
  7. Divide the batter evenly into 12 muffin cups.
  8. Bake at 400°F (200°C) for 25 minutes.
