- Preheat oven to 425°F.
- Sift flour, sugar, baking powder, and salt together.
- Chop in butter with a pastry blender until the mixture resembles coarse meal.
- Add beaten egg and milk to the dry ingredients.
- Stir quickly and lightly until no flour shows and the dough comes together.
- Turn dough out onto a floured surface and knead gently about 15 times.
- Divide the dough in half.
- Shape each half into a ball and press each into a round about 1/2 inch thick.
- Cut each round into 8 wedges like a pie.
- Place the wedges on a greased cookie sheet, spaced apart.
- Optional: glaze with lightly beaten egg before baking.
- Bake until golden brown, about 12 minutes.
