Ingredients

  • 2 (8 oz.) boxes dates, chopped and pitted
  • 5 cups chopped pecans
  • 1 cup sugar
  • 1 cup flour
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 2 eggs
  • 1 ounce vanilla extract

Instructions

  1. Cream together the sugar and eggs in a mixing bowl.
  2. In a separate bowl, combine the flour, salt, and baking powder, then sift this mixture over the chopped pecans and dates to coat them evenly.
  3. Add the coated nuts and dates to the sugar and egg mixture, mixing well to combine.
  4. Stir in the vanilla extract until fully incorporated.
  5. Pour the batter into a loaf pan and bake at 275°F (135°C) for 1 hour and 20 minutes, or until a toothpick inserted into the center comes out clean.
