Ingredients

  • 2 cups black-eyed peas
  • 1/2 pound lean salt pork
  • 2 cups rice
  • 1 medium chopped onion
  • 1 cup diced tomatoes
  • a dash of Tabasco

Instructions

  1. Wash the black-eyed peas and soak them overnight.
  2. Drain the soaked peas.
  3. Fry the salt pork, diced tomatoes, and chopped onion until well cooked.
  4. Add 2 1/2 pints of water, the drained peas, rice, and season with salt and pepper.
  5. Cook slowly in a covered pot for approximately 1 hour or until all the liquid has dried out.
