Ingredients

  • 1 cup cooked grits
  • 1/2 pound bacon
  • 1 onion
  • 1 bell pepper
  • 1 egg
  • 1 cup cubed cooked ham
  • 1 (16 oz) can tomatoes
  • salt

Instructions

  1. Fry bacon until crispy, then remove from pan and crumble.
  2. Add chopped onion, chopped bell pepper, and cubed cooked ham to the bacon drippings and sauté until vegetables are tender.
  3. In a mixing bowl, combine cooked grits, beaten egg, salt, pepper, and the cooked vegetable and ham mixture.
  4. Add canned tomatoes to the mixture and stir well.
  5. Pour everything into a baking dish and bake at 350°F for 30 minutes.
