  • 1/2 c. cold water
  • 1 lb. ground turkey
  • 1 (1 1/4 oz.) pkg. taco seasoning mix
  • 1 c. water
  • 10 oz. frozen chopped spinach, thawed and squeezed dry
  • 1 c. Ricotta cheese
  • 1/3 c. chopped green onion
  • 1 1/2 c. shredded Cheddar cheese
  • 1 c. sour cream
  • 1 egg

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine baking mix and 1/2 cup water to form a soft dough. Press dough into the bottom of a greased 13 x 9-inch baking dish.

  4. Spoon the turkey mixture over the dough in the baking dish.
  5. In a separate bowl, combine thawed spinach, Ricotta cheese, and chopped green onions. Spread this mixture over the turkey layer.
  6. In a small bowl, mix shredded Cheddar cheese, sour cream, and lightly beaten egg.
  7. Spoon the cheese mixture evenly over the spinach layer.
  8. Bake for 30 to 35 minutes until set. Let stand for 5 minutes before serving.

Tips & Substitutions

For a spicier kick, consider adding diced jalapeños or a dash of hot sauce to the turkey mixture. If you don't have Ricotta cheese, cottage cheese can be a suitable substitute. You can also use ground beef or chicken instead of turkey for varied flavor. To save time, pre-cooked frozen spinach can be used instead of thawing raw spinach.

Serving Suggestions

For a heartier option, pair it with a warm serving of Easy Turkey Chili, ensuring a satisfying and flavorful dining experience.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave for 1-2 minutes or until warmed through. Alternatively, you can reheat the entire dish in a preheated oven at 350°F (175°C) for about 15-20 minutes, covered with foil to prevent drying out.
