Ingredients

  • 1 lb. ground turkey
  • 1 c. chopped onions
  • 1 medium green pepper, chopped
  • 2 cloves garlic, minced
  • 3 (15 oz.) cans pinto beans, drained and rinsed
  • 1 (16 oz.) can recipe-style stewed tomatoes
  • 1 c. salsa
  • 1 Tbsp. ground cumin
  • 2 tsp. chili powder
  • reduced-fat Cheddar cheese or fat-free sour cream

Instructions

  1. Spray a saucepan with nonstick spray.
  2. Add ground turkey, chopped onions, chopped green pepper, and minced garlic.
  3. Cook until the turkey is lightly browned and cooked through.
  4. Add drained and rinsed pinto beans, stewed tomatoes with juices, salsa, ground cumin, and chili powder.
  5. Bring the mixture to a boil, then reduce the heat.
  6. Cover and simmer for 20 minutes to blend flavors.
  7. If desired, top with reduced-fat Cheddar cheese or fat-free sour cream.
