Ingredients

  • 1 1/2 lb ground beef
  • chopped onion to taste
  • 1 can Ranch Style beans
  • 12 flour tortillas
  • 8 oz Velveeta cheese sliced
  • 1 can cream of chicken soup

Instructions

  1. Brown ground beef and chopped onion in a skillet; drain excess fat.
  2. Add Ranch Style beans to the beef mixture; stir well.
  3. Place 6 tortillas in the bottom of a casserole pan.
  4. Layer the beef and bean mixture over the tortillas.
  5. Add sliced Velveeta cheese on top of the beef mixture.
  6. Place remaining tortillas over the cheese layer.
  7. Mix cream of chicken soup and Ro-Tel diced tomatoes in a bowl.
  8. Pour the soup mixture evenly over the layered tortillas.
  9. Bake at 350°F for 45 minutes until hot and bubbly.
