Ingredients

  • 2 c. boneless chicken breasts, cubed
  • 1/4 c. sour cream
  • 1/4 c. low-fat or fat-free mayo
  • 1/2 c. low-fat or fat-free Cheddar cheese, shredded
  • 1/4 c. Mozzarella cheese, shredded
  • 1 c. salsa
  • burritos or tortillas (soft pack)
  • 1/4 tsp. cumin
  • 1/4 tsp. mustard
  • 1/4 tsp. salt

Instructions

  1. Cook chicken in a skillet until done.
  2. Mix mayonnaise, sour cream, cumin, mustard, salt, and pepper in a bowl.
  3. Add cooked chicken to the mixture and stir to combine.
  4. Add shredded cheeses and mix thoroughly.
  5. Place two spoonfuls of the chicken mixture onto each tortilla shell.
  6. Roll up the tortillas and place them in a baking dish.
  7. Spoon salsa over the rolled burritos.
  8. Sprinkle with shredded Mozzarella cheese.
  9. Bake at 350°F (175°C) for 15 minutes until cheese is melted and bubbly.
