Texican Rice
Ingredients
- 2 tablespoons (1/4 stick) unsalted butter ⓘ
- 1 cup chopped onion ⓘ
- 1 green bell pepper, chopped ⓘ
- 3 garlic cloves, chopped ⓘ
- 2 6-ounce packages long-grain and wild rice mix (reserve seasoning packets for another use) ⓘ
- 1/2 tablespoon chili powder ⓘ
- 1 15-ounce can tomato sauce ⓘ
- 1/2 cup chopped fresh cilantro ⓘ
- 3 cups canned chicken broth, heated ⓘ
Instructions
- Melt butter in heavy large saucepan over medium heat.
- Add onion, bell pepper and garlic and saute until just soft, about 8 minutes.
- Add rice and chili powder and stir until well blended, about 1 minute.
- Mix in tomato sauce and heat through.
- Mix in 1/4 cup cilantro and broth.
- Bring mixture to boil.
- Cover and reduce heat to low.
- Simmer until rice is tender and liquid is absorbed, about 25 minutes.
- Transfer rice to bowl.
- Garnish with remaining 1/4 cup cilantro and serve.
