Crisp and tangy icicle pickle slices combine fresh cucumbers and sweet peppers with a sweet and sour brine, perfect for relish lovers and condiment enthusiasts.

Ingredients

  • 1 gal. sliced cucumbers
  • 2 red sweet peppers
  • 1/3 c. salt
  • 8 medium onions
  • 3 cloves garlic
  • 3 c. white vinegar
  • 5 c. sugar
  • 1 tsp. mustard seed
  • 2 tsp. celery seed

Instructions

  1. Cover cucumbers and sweet peppers with ice water, add 1/3 cup salt, and let stand for 3 hours.
  2. Drain thoroughly.
  3. Combine the remaining ingredients: vinegar, sugar, mustard seed, and celery seed.
  4. Pour the mixture over the pickles and bring to a boil.
  5. Put in hot cans and process for sealing.
