  • 2 Tbsp. salad dressing or mayo

  2. Divide the dressed spinach onto four salad plates.
  3. Hard-boil four eggs, then peel and slice off the top and bottom so each egg can sit upright.
  4. Place one prepared egg on each salad plate.
  5. Dice the egg white ends that were sliced off.
  6. Slice both tomatoes in halves and place each half on top of an egg, cut side down, to resemble a mushroom cap.
  7. Moisten each tomato cap with a little olive oil and sprinkle the diced egg whites on top.
