Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. all-purpose flour
  • 1/2 cup grated sharp Cheddar cheese
  • 1 cup milk
  • salt to taste
  • cayenne pepper to taste

Instructions

  1. Melt the butter in a small enameled iron saucepan or a double boiler.
  2. Add the flour and blend well.
  3. Add cheese and beat until smooth.
  4. Slowly add the milk, stirring constantly.
  5. Cook until the sauce is thick and perfectly smooth, approximately 4 minutes.
  6. Add salt and cayenne pepper to taste.
