Three-Bean Barbecue Bake

Ingredients

  • 2 teaspoons vegetable oil
  • 1 1/2 cups chopped onion
  • 1 cup chopped green pepper
  • 1 cup chopped sweet red pepper
  • 2 cloves garlic, minced
  • 3/4 cup low-sodium ketchup
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup molasses
  • 1 tablespoon cider vinegar
  • 1 teaspoon dry mustard
  • 1 (16-ounce) can Great Northern beans, drained
  • 1 (16-ounce) can no-salt-added kidney beans, drained
  • 1 (16-ounce) can lima beans, drained
  • Vegetable cooking spray

Instructions

  1. Heat oil in a large nonstick skillet over medium-high heat. Add onion, peppers, and garlic; saute 5 minutes or until tender. Stir in ketchup and next 4 ingredients; bring to a boil. Stir in beans.
  2. Pour mixture into an 11- x 7- x 1 1/2-inch baking dish coated with cooking spray. Bake, uncovered, at 325° for 55 minutes or until bubbly.
