Ingredients

  • 7 lb. cucumbers, sliced
  • 2 c. lime
  • 2 oz. alum
  • 10 c. vinegar
  • 12 c. sugar

Instructions

  1. Soak cucumbers in 2 gallons of lime water for 24 hours.
  2. Drain and rinse the cucumbers.
  3. Soak the cucumbers for 24 hours in 1 gallon of alum water.
  4. Drain and wash the cucumbers twice in water.
  5. Combine vinegar, sugar, and spices to make the pickling liquid.
  6. Pour the vinegar mixture over the cucumbers and let stand for 3 hours.
  7. Place the jars over low heat for 1 hour; do not boil.
  8. Pack the cucumbers into jars, cover with the vinegar liquid, and seal.
