Ingredients

  • 9 or 10-inch double pie shell
  • 1 1/2 cups rhubarb, chopped
  • 1 1/2 cups blueberries
  • 1 cup strawberries, sliced
  • 1 cup sugar
  • 3 tablespoons tapioca
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla
  • dash of nutmeg

Instructions

  1. Preheat oven to 375°F.
  2. Combine chopped rhubarb, blueberries, and sliced strawberries in a bowl.
  3. Add sugar and tapioca to the fruit mixture.
  4. Toss to coat the fruit evenly.
  5. Stir in lemon juice and vanilla extract.
  6. Let the fruit mixture stand for 15 minutes, stirring once.
  7. Pour the filling into an unbaked double pie shell.
  8. Sprinkle a dash of nutmeg over the filling.
  9. Cover the pie with a lattice crust.
  10. Cover the rim of the pie shell with foil.
  11. Bake at 375°F for 25 minutes.
  12. Remove the foil and bake for an additional 25 minutes.
  13. Allow the pie to cool before serving.
