Three-In-One Refrigerator Rolls

Ingredients

  • 2 pkg. dry yeast
  • 1 1/2 c. warm water
  • 1 c. mashed potatoes, prepared with milk and butter
  • 2/3 c. sugar
  • 2/3 c. shortening
  • 1 1/2 tsp. salt
  • 2 eggs, lightly beaten
  • 7 c. all-purpose flour
  • melted butter

Instructions

  1. In a large bowl, dissolve yeast in warm water.
  2. Stir in mashed potatoes, sugar, shortening, salt, eggs, and 5 cups of flour; beat until smooth.
  3. Stir in enough remaining flour to form a firm dough.
  4. Turn the dough onto a floured surface and knead until smooth and elastic, about 7 minutes.
  5. Place the dough in a large greased bowl, turning once to grease the top.
  6. Cover and refrigerate for 8 hours or overnight.
  7. Punch the dough down.
  8. Turn onto a lightly floured surface and divide into 3 portions.
  9. Shape each portion into cloverleaf or pan rolls.
  10. Cover and let rise in a warm place until doubled in size.
  11. Bake at 400°F (200°C) for 16 minutes.
  12. Brush with melted butter before serving.
