Three-In-One Refrigerator Rolls
Soft, fluffy refrigerator rolls with a hint of sweetness and richness from potatoes and butter, perfect for family dinners, brunches, or holiday gatherings.

Instructions
- In a large bowl, dissolve yeast in warm water.
- Stir in mashed potatoes, sugar, shortening, salt, eggs, and 5 cups of flour; beat until smooth.
- Stir in enough remaining flour to form a firm dough.
- Turn the dough onto a floured surface and knead until smooth and elastic, about 7 minutes.
- Place the dough in a large greased bowl, turning once to grease the top.
- Cover and refrigerate for 8 hours or overnight.
- Punch the dough down.
- Turn onto a lightly floured surface and divide into 3 portions.
- Shape each portion into cloverleaf or pan rolls.
- Cover and let rise in a warm place until doubled in size.
- Bake at 400°F (200°C) for 16 minutes.
- Brush with melted butter before serving.
