Ingredients

  • 3 vegetables zapped in a blender
  • 1 onion, finely cut
  • 1 can chicken or beef broth
  • 3 tsp butter
  • milk or cream, as desired

Instructions

  1. Lightly saute onion in butter.
  2. Add broth to the onion and butter mixture.
  3. Add the zapped vegetables to the pot.
  4. Cook for about 30 minutes, stirring often.
  5. Allow the soup to come to a boil and cook for about 5 minutes.
  6. Add milk or cream, depending on desired creaminess.
  7. Optionally thicken with frozen mashed potatoes instead of milk or cream.
  8. Serve with a dash of paprika on top of a lemon slice floating on the soup.
