Ingredients

  • 1 tsp chopped fresh thyme
  • 1/4 tsp dried thyme
  • 1/2 tsp salt
  • 2 tsp finely chopped garlic
  • 2 Tbsp olive or vegetable oil
  • 1 1/2 cups fresh asparagus, 1 inch pieces
  • 1 1/2 cups red pepper strips
  • 1 1/2 cups baby carrots, lengthwise quartered

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a large bowl, stir together chopped fresh thyme, salt, finely chopped garlic, and oil.
  3. Add the vegetables— asparagus, red pepper strips, baby carrots, and leeks— and mix gently to coat.
  4. Place the coated vegetables in a 9x13 inch baking pan.
  5. Cover the pan with foil and bake for 25 minutes, stirring occasionally.
  6. Uncover and continue baking for an additional 15 to 20 minutes, stirring once, until vegetables are tender and just start to brown.
