- Preheat oven to 400 degrees Fahrenheit.
- In a large bowl, stir together chopped fresh thyme, salt, finely chopped garlic, and oil.
- Add the vegetables— asparagus, red pepper strips, baby carrots, and leeks— and mix gently to coat.
- Place the coated vegetables in a 9x13 inch baking pan.
- Cover the pan with foil and bake for 25 minutes, stirring occasionally.
- Uncover and continue baking for an additional 15 to 20 minutes, stirring once, until vegetables are tender and just start to brown.
