Ingredients

  • 1/2 cup vegetable oil
  • 1 loaf dry French bread
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1 teaspoon dried basil leaves
  • 1/4 teaspoon oregano
  • 1/2 cup fresh parsley
  • 3 or 4 tender zucchini squash, sliced 1/4-inch thick
  • 4 to 5 medium potatoes, sliced 1/4-inch thick
  • salt to taste
  • pepper to taste

Instructions

  1. Coarsely crumble the French bread into 1/2-inch pieces and set aside.
  2. Combine grated Parmesan cheese, garlic powder, dried basil leaves, oregano, and chopped fresh parsley in a bowl.
  3. Layer sliced potatoes, zucchini, and tomatoes in a baking dish, seasoning each layer with salt and pepper.
  4. Sprinkle the cheese and herb mixture evenly over the layered vegetables.
  5. Top with the crumbled bread pieces.
  6. Drizzle vegetable oil over the top.
  7. Bake in a preheated oven at 375°F (190°C) for about 40 minutes, or until golden brown and vegetables are tender.
