Ingredients

  • 2 slices bacon
  • 1/2 lb. pork sausage links, cut in 1/2-inch pieces
  • 1 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 c. milk
  • 3 beaten eggs

Instructions

  1. Cook bacon until crisp; drain.
  2. Set aside 1 tablespoon of drippings.
  3. Crumble the cooked bacon and set aside.
  4. In the same skillet, brown the sausage links; drain off excess fat.
  5. In a bowl, stir together the flour, baking powder, and salt.
  6. Add milk and beaten eggs to the dry ingredients; beat until smooth.
  7. Spread the reserved bacon drippings in a 10 x 6 x 2-inch baking dish.
  8. Place the cooked sausage pieces in the dish; sprinkle with crumbled bacon.
  9. Pour the batter over the sausages and bacon.
  10. Bake uncovered at 400°F (200°C) until set and golden, about 30 to 35 minutes.
