Ingredients

  • 1 lb. small link sausage
  • 2 Tbsp. water
  • 2 eggs
  • 1 c. milk
  • 1 c. sifted flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Place sausage and water in a 10-inch skillet.
  2. Cover and cook over low heat for 3 minutes.
  3. Remove cover; increase heat to medium and cook until brown and water is evaporated.
  4. Prepare batter by beating eggs with a whisk.
  5. Add milk and blend well.
  6. Add sifted flour, salt, and pepper; blend until smooth.
  7. Pour 1/4 cup sausage drippings into an 11 x 7 x 1 1/2-inch baking dish.
  8. Arrange sausage links on the bottom of the dish.
  9. Pour batter over the sausages.
  10. Bake in a 425°F oven for 30 minutes until golden and puffed.
