Ingredients

  • 2 lb. tofu
  • 1/2 tsp. salt
  • 1/4 cup lemon juice
  • 1/2 cup dried pineapple
  • 2 tsp. vanilla
  • 1 tablespoon cornstarch
  • 3 tablespoons water
  • 1 1/2 cups granola

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare crust by crushing granola in a blender to make 1 1/4 cups of crumbs.
  3. Press the granola crumbs into a 9-inch pie plate to form the crust.
  4. In a blender, combine tofu, salt, lemon juice, dried pineapple, vanilla, cornstarch, and water until smooth.
  5. Pour the tofu mixture over the prepared crust.
  6. Bake in the preheated oven for 30 minutes or until set and lightly browned.
  7. Allow to cool before refrigerating. Serve chilled.
