A creamy tofu-based fruit ambrosia with fresh seasonal fruits, honey, and lemon, perfect for a light, nutritious dessert or snack suited for all ages.

Ingredients

  • 1 lb. medium tofu
  • 1 tsp. lemon juice
  • 1 c. honey
  • 1 c. strawberries
  • 2 bananas

Instructions

  1. Whip all ingredients in a blender until smooth.
  2. Use a variety of seasonal fruits such as strawberries, blueberries, peaches, bananas, oranges, apples, pears, and pineapple.
  3. Keep the tofu cream refrigerated before serving.
  4. Prepare fruit by cutting into bite-sized pieces, then pour the cream over the fruit.
  5. Garnish with nuts, coconut, and minced fruit.
  6. Change fruits with the seasons to enjoy year-round.
