Catherine's Cucumbers are crisp, tangy pickles with a sweet and sour flavor, perfect as a refreshing side or snack for summer gatherings and picnics.

Ingredients

  • 3 or 4 fresh cucumbers
  • 1 green bell pepper
  • 1 medium onion
  • 1 Tbsp salt
  • 3/4 cup sugar
  • 1/4 cup vinegar
  • 2 tsp celery seed

Instructions

  1. Slice all vegetables very thin.
  2. Sprinkle 1 tablespoon of salt over the vegetables.
  3. Set aside for 1 or 2 hours.
  4. Drain off water.
  5. Mix 3/4 cup of sugar, vinegar, and celery seed and pour over vegetables.
  6. Refrigerate before eating.
