Tomato Corn Bake
A colorful, cheesy baked tomato dish filled with sweet corn and green onions, perfect as a light lunch or side dish for summer gatherings.

- Cut the tomatoes in halves crosswise.
- Remove seeds and most of the pulp from the centers.
- Sprinkle the cavities with salt.
- Combine the drained corn, shredded Swiss cheese, and sliced green onions.
- Firmly pack the mixture into each tomato shell.
- Place the stuffed tomatoes in a greased baking dish.
- Cook uncovered in the microwave for 4 to 5 minutes on High.
- Then bake in the oven for 20 to 30 minutes until heated thoroughly.
