Ingredients

  • 3 medium tomatoes
  • 8 oz. can whole kernel corn, drained
  • 2 oz. shredded Swiss cheese
  • 1 Tbsp. sliced green onions

Instructions

  1. Cut the tomatoes in halves crosswise.
  2. Remove seeds and most of the pulp from the centers.
  3. Sprinkle the cavities with salt.
  4. Combine the drained corn, shredded Swiss cheese, and sliced green onions.
  5. Firmly pack the mixture into each tomato shell.
  6. Place the stuffed tomatoes in a greased baking dish.
  7. Cook uncovered in the microwave for 4 to 5 minutes on High.
  8. Then bake in the oven for 20 to 30 minutes until heated thoroughly.
