Broccoli Barley Soup

Ingredients

  • 3 Tbsp. butter or margarine
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 1/4 lb. mushrooms, sliced
  • 1/2 tsp. dried rosemary
  • 6 c. vegetable stock
  • 3/4 c. pearl barley
  • 1 lb. broccoli
  • 2 Tbsp. cornstarch
  • 1/4 c. water
  • 2 c. milk
  • salt and pepper
  • Parmesan cheese

Instructions

  1. In a 5-quart saucepan, over medium heat, melt the butter.
  2. Add chopped onions, minced garlic, and sliced mushrooms. Cook until soft.
  3. Add dried rosemary, vegetable stock, and pearl barley. Bring to a boil.
  4. Cover and simmer until barley is tender, about 45 minutes.
  5. Remove broccoli flowerets and cut into bite-sized pieces.
  6. Peel broccoli stems and slice thinly.
  7. When barley is tender, increase heat and add broccoli to the soup. Cover and cook until broccoli is tender and bright green, about 10 minutes.
  8. Stir together cornstarch and water to make a slurry.
  9. Add the cornstarch mixture and milk to the soup. Stir until the soup boils and thickens.
  10. Add salt and pepper to taste.
  11. Serve each portion lightly sprinkled with Parmesan cheese.
